Aspic is a type of clear jelly made from a meat stock and gelatin which has foods placed into it. It is usually prepared with various meat dishes. So, it basically refers to a meat jelly (which historically was invented before fruit jellies and vegetable jellies). Aspic was developed in Europe in the Middle Ages. Thus, a dark aspic would refer to a 'dark meat-jelly'.
