This is just like napa cabbage, only elongated. Su choy is basically the name for the Chinese celery cabbage, which is a type of cabbage formed of more delicate leaves, which range from white o grass green. The taste of this leaf vegetable is eaten both raw in mixed green salads or cooked in soups belonging to the Chinese cuisine. Su choy is related with other leaf vegetables, like the green cabbage, the Savoy cabbage, cauliflower, broccoli, kale, spring greens and collard greens, which are all important aliments that are recommended not to miss from any healthy culinary habit.
