Pepper Jelly 6 cups finely chopped red or green bell peppers 3/4 cup finely chopped onion 1/2 cup finely chopped red or green jalapeno chili peppers 1 cup vinegar, divided 3 cups sugar Red or green food coloring, optional Combine all ingredients in a large non reactive cooking pot; bring to a boil. Reduce heat and simmer 30 to 40 minutes, stirring frequently. Remove from heat and skim. Add food coloring if desired. Pour into sterilized jars.
