James Mac is an environmental health officer from Hotten Borough Council that investigated Mandy's Munchbox mobile catering van after a report from shop mistress Viv Windsor. Whilst inspecting the catering van, James found mouse traps and talked to owner Mandy Dingle about the importance of hygiene, but he was not impressed with her cousin Butch Dingle's lack of hygiene. James inquired about Mandy's permit so Mandy's Uncle Zak Dingle said they had applied for it and was likely to be on the doormat when they arrived home. James gave Mandy a list of things to do to put things right with the catering van and revealed he could recommend prosecution if they don't comply. Zak chased James away.
