There is no smoke "when the pope dies." You are probably thinking of the papal conclave, where the new pope is elected. Several sessions of votes are taken. If there is a winner, the ballots are burned with a chemical to produce white smoke. If there is no winner, the ballots are burned with a chemical to produce black smoke.
