Usage stats on Why is it that in the soul society arc Zabimaru is a monkey with a snake tail and in the Zanpakutō Unknown Tales arc its not

The Zanpakuto Unknown Tales is a filler arc, and it is not considered canon. Zabimaru's true form is the Baboon with snake tail that appears in the SS arc. Why the animators decided to give Zabimaru and Hyorinmaru more human forms in the fillers is unknown yet, but it was probably to keep them atone with the other human-looking spirits
