Harbison is a bark-wrapped bloomy-rind cheese described by its creator, Jasper Hill Farm as having "woodsy, sweet, herbal, and bright flavors." The cheese was named after Anne Harbison, seen by many to be the grandmother of Greensboro, Vermont.
